These paring knives are staying sharp. I have very nice Chicago Cuttley knives, but I could not find a local shop to sharpen them. So bought these. They arrived sharp and are holding up with daily use. I give them a quick rinse and wipe, but they would probably be okay in the dishwasher if you kept the edge from being banged against other cutlery. I’ll mail my good knives off to be sharpened because these will probably break apart from the plastic handle. I prefer spending more on better quality products, but these will do okay until my good knives get back.

Had to buy more of these! After receiving a vitorinox pairing knife as a wedding gift 11 years ago, I realized it was the only knife I’ve kept & still used after all these years! I’ve still never sharpened it, and after using it multiple times each day all this time (and it’s still just as sharp), I wanted more of them! So glad I bought a 3 pack. These are just the best! The handle fits your hand like a dream & doesn’t slip around, and the blade is superb… I use it for everything from slicing tomatoes to peeling fruit. But it’s not so dangerously sharp that I’m afraid I’ll accidentally flay myself open! Totally recommend these for anyone!
