About Us

In 1884, Karl Elsener opened his cutler’s workshop in Ibach-Schwyz. In the early years Karl Elsener worked to combat poverty and unemployment in the Schwyz basin, creating jobs and helping stem the flow of emigration. In 1891 he supplied the soldier’s knife to the Swiss Army . He went on to develop the Swiss Officer’s and Sports Knife – now the Swiss Army Knife – in 1897.

    I’m a professional butcher and I’ve used lots of knives over the years. This one is definitely worth it even with the steep price tag. Cuts through big pieces of meat easily.The factory edge is pretty good,the hardness of the steel maintains a good edge.

    I did want the larger version, but the price on the smaller version was better. I am happy with my decision, for most cuts of meat at home the smaller version works just fine, and it’s not small in any sense of the word, it’s only small relative to the larger version. That was my main concern, but it fits the hand quite well, and the gussets help with pieces of cut meat sticking. I am very happy with it and feel it will keep it’s edge over the long run. It is a good design and a good implementation of that design. You can’t beat it for the price.

    This is a highly specialized knife used for breaking down whole animals. It is not a chef’s knife. That being made clear, I do use it for cutting pizzas, pies, cakes, etc. because of the length. I absolutely love it. The balance, the feel in my hand, the edge it takes, how it performs… An excellent knife for the price.
