I purchased this on the recommendation of Chef Michel Courtine. It is very sharp, as expected, and time will tell how the edge will hold up. But I did find the knife extremely well balanced – better than I had hoped. It easily becomes an extension of your arm when using it. I’ll be buying other forged styles.

This beautiful knife is perfectly balanced. You just move it through food–cutting is effortless. Everyone else has reviewed it in more detail, so I won’t repeat them. Suffice it to say, I just can’t get over it! I wish I’d bought one of these years ago.

I bought this 8 inch knife after my Wusthof couldn’t get the job done anymore after 7 years of faithful service. This Victorinox is an absolute beast. Sharp out of the box, takes a quick hone like a champ to bring back to life. I have cut thousands of pounds of potatoes as well as cleaned thousands of chicken breasts with this bad boy in the last two months and it keeps its edge with minimal upkeep. I’ve used Wusthof, Global and Henkel in the the past…I’m going with Victorinox from now on. The grip is a little off for me, but thats the only slight mark against it I can give.

This brand of knife seems to be consistent with their quality. Steel type and their method of heat treating the steel makes sharpening and maintaining the edge easy.
