    I work as a meat cutter, and this knife is my workhorse. Small enough to remove silverskin and get around bone, and big enough to cut chops, ribs, and filets. Sure a bigger or smaller specialized knife might do a better job, but if you are good enough with this knife, loss of quality of cuts is negligible. Also you don’t have to switch knives as much.As described, it is not a flexible blade. Razor sharp out of the box. I cut ribbons of paper just to see. Slip resistant handle is comfortable for different grips and maneuvering. And for ~$20, it’s a fantastic deal. Fantastic knife, regardless of the price.

    This blade is scary sharp and is an outstanding boning knife. I use it for processing deer and I have even used it, in a pinch, to actually skin a deer. Not the best skinning knife, but did ok. Great for retrieving the back strap and tenderloins in one piece. I deboned four deer last year without resharpening. Now, granted, I was VERY careful not to hit bone while deboning the flesh. As with any blade, hit bone = resharpen. Great working blade. Hope this helps someone.Update: After rereading my review i need to clarify something. I did NOT have to sharpen this blade after deboning 4 deer but I did give it a few strokes on my honing steel in between deer. That’s normal, still an excellent blade.

    I ended up buying this knife because I had a different one on order from months. With BBQ season here I couldn’t wait any longer. This knife is great. Conformable handle that protects your hand from slipping. Sharp out of the box and easy to sharpen.

    Great little boning knife. I used it this fall to process our deer and it worked great. Hair popping sharp out of the box (mine arrived solely in bubble wrap with a plastic blade cover. Not the best packaging.) If you are careful not to cut bone the edge will last for multiple deer. Used only this knife on an entire deer skinning and boning out. Cleaned the blade off with water and it still cut paper with ease and was still razor sharp. Highly recommend for the price.

    I like my first one I got this one because it had a red handle. The first one I got was a black handle but had to buy the red handle because that is what Bradley Robinson uses on Chuds BBQ on YouTube. Lol I put the black handle one in my camping grab box so I always have one. Keeps an edge well but is hard to reshaping. One you get it sharp again it lasts just as long. Highly recommend!

    Wend through a leg of lamb like it was butter. Sliced through a piece of salmon like a scalpel – I had to “saw” it with my Henkels knives before. Very impressed just from this initial use – will see how it holds up!

    I use this knife for processing/deboning deer. It is absolutely great. Unlike some of the cheaper options this holds the edge longer. With just a little care this knife will last you a long time.

    Victorinox knifes are my go to affordable knifes the resharpen perfectly and hold their edge. Also the paring knife by them is my favorite knife hands down, I never use a different brand because it is so superior to other brands paring knifes.
