These knives are specially ground and tempered so that they can be re-sharpened over and over again, keeping a sharp edge throughout their lifetime. The handle is ergonomically designed to help minimize tension at the wrist and provides a much more comfortable grip than rosewood handles. A stiff boning knife is good for boning beef and pork, but a very flexible boning knife is preferred for poultry and fish. This product is brand-new, unused in its original packaging (where packaging is applicable) as shipped by Victorinox.

    Does the job well! Sturdier than many paring knives, but with a fine tip so it remains nimble. The handle is nearly the size of a chef knife, so comfortable at the expense of a little dexterity for in-hand work. It’s nowhere near the bargain that the 8″ and 6″ chef models are, hence -1*.
