    I never thought I had a need for this. I don’t slice a lot of large cuts of meats. But I’ve taken to using this lovely instrument for cured salmon and other meats, roasts, and sometimes even bread or vegetables.Well made, well priced, and it holds an edge well. I highly recommend this addition to your kitchen if you are looking for something in this size.

    The knife arrived in an oversized clear plastic sleeve, which is not really great for storage exactly…so, that detail I need to work out. But that is not really a knife critique.This knife came out of the package sharp as a razor. The handle is textured, and I think that it allows for a secure grip even with wet or slippery hands. The handle may be a bit short, but that is a nitpick thing that I do not think is of any real concern.The blade is thin, and I used it twice immediately to see how well it cut:First, to cut cooked strip steaks for “presentation” (I wanted to see how well this thing sliced). Like a hot knife through butter (no pun really intended, but it is an opportunistic metaphor).Second, to open a two-bone rib roast vacuum bag, and slice the rib roast into two (gigantic) steaks. The plastic bags I use for vacuum packing/freezing are pretty thick, and while not really that difficult to cut open, if your knife is not optimum sharp, you need to have a little bit of tension on the bag to get it to cut. With this knife, I had no issues. I had decided to “butcher” the rib roast (by cutting it in half) anyway, and this thin blade was the perfect tool. Two perfect steaks, and I could tell that this was a definite purpose slicing blade…I could tell that this was a thin blade design, and really sharp.I purchased this to cut brisket. I am smoking a brisket today, and I fully expect perfect slices with this knife.This brand came highly recommended, and I think that I agree. Hoping that the edge stays sharp…I am looking at a butcher essentials set from Victorinox, as well…might as well get some real tools that are right for the job.

    After I received this knife and tested it for a few days I bought another one and sent it to my nephew who smokes a lot of brisket. It was plainly obvious, after I saw it and used it, that it would make the perfect brisket slicer.It is SHARP from the factory. It’s comfortable and it will slice some stuff up.It does a great job for what it was designed to do.

    This knife is just very good, the weight, the balance, the blade. It is not a cheap knife but is worth every bit of it. I would have loved an option with a better protective sleeve but I appreciate it came with something.

    Let’s start with the bad. The plastic sheath that comes with this knife is awful at best. However I didn’t buy a plastic sheath, I bought a giant slicing knife and buddy that’s what I got!The knife feels great in the hand. The molded grip lends itself well to the sawing motion you make with the knife. The blade itself is the sharpest thing I’ve ever held. It effortlessly cut through ham and turkey with the greatest of ease. My brother and I were trying to see who could cut the thinnest piece of ham. Turns out we’re goobers that were holding up the line for the the rest of the family but regardless it was amazing. I look forward to using this any chance I get!

    Although a little pricey… I’m glad I purchased the Pro Slicing Knife with Granton Blade. Delivered as promised and used it last month when whole family was invited for a Prime Rib roast dinner. Blade extremely sharp and able to slice quickly any requested slice size.
